Ingredients

  • 0.5 Cup butter
  • 0.5 Cup white sugar
  • 1 Whole egg
  • 1 Teaspoon vanilla extract
  • 2 Cups all-purpose flour
  • 1 Teaspoon baking powder
  • 0.5 Cup raspberry jam
  • 1 Cup confectioners' sugar
  • 0.25 Teaspoon almond extract
  • 1 Tablespoon hot water
  • 0.25 Cup candied cherries, minced

Steps

  1. Cream the butter in a mixing bowl. Add the sugar and continue creaming until well combined. Beat in the egg and vanilla extract.
  2. In a separate bowl, combine the flour and baking powder. Gradually add this to the creamed mixture, mixing until a dough forms.
  3. On a lightly floured surface, roll out the dough to a thickness of 1/8 inch. Cut into 2-inch rounds and place them on ungreased baking sheets.
  4. Bake in a preheated oven at 350°F (175°C) for 10 minutes, or until the edges are very lightly browned. Allow the cookies to cool thoroughly.
  5. Spread raspberry jam on half of the cookies and top with the remaining cookies to form sandwiches.
  6. In a small bowl, combine confectioners' sugar, almond extract, and enough hot water to create a thin icing. Frost the tops of the cookies with this icing.
  7. Top each cookie with a small piece of minced candied cherry.
