- 0.5 Cup (c) candied mixed fruit, divided
- 2 Whole eggs, whisked
- 0.25 Cup (c) orange juice
- 2 ¾ Cups (c) all-purpose flour, sifted
- 2 Teaspoons (tsp) ground cinnamon
- 1 Teaspoon (tsp) ground cloves
- 2 Teaspoons (tsp) ground cardamom
- 1 Teaspoon (tsp) baking soda
- 1 Teaspoon (tsp) baking powder
- 1 ½ Cups (c) confectioners' sugar
- 2 ½ Tablespoons (tbsp) orange juice
- 0.25 Cup (c) green decorator sugar
- 0.25 Cup (c) cinnamon red hot candies
Steps
- In a large saucepan, combine the white sugar, honey, and water. Bring to a rolling boil, then remove from heat and allow to cool.
- In a medium bowl, mix the cooled honey mixture with chocolate chips, divided almonds, divided candied mixed fruit, whisked eggs, and 0.25 cup (c) orange juice.
- Sift together the all-purpose flour, ground cinnamon, ground cloves, ground cardamom, baking soda, and baking powder. Stir this into the fruit and nut mixture.
- Cover the bowl tightly and refrigerate for 2 to 3 days to allow the flavors to blend.
- Preheat the oven to 325°F (165°C). Grease and flour a 10x15 inch jellyroll pan.
- Spread the dough evenly into the prepared pan.
- Bake in the preheated oven for 35 to 40 minutes. Allow to cool.
- For the orange frosting, place the confectioners' sugar in a small bowl and gradually beat in 2 ½ tablespoons (tbsp) of orange juice until the desired consistency is reached.
- Spread the orange frosting over the cooled bars.
- Cut the bars into diamond shapes, place a cinnamon candy on top of each, and sprinkle with green decorator sugar.
