  • 1 Cup butter
  • 1 Cup white sugar
  • 1 Cup packed brown sugar
  • 3 Large eggs, whisked
  • 4 Cups all-purpose flour
  • 0.5 Teaspoon (tsp) salt
  • 1 Teaspoon (tsp) vanilla extract
  • 1 Teaspoon (tsp) baking soda
  • 2.5 Cups dates, minced
  • 0.5 Cup white sugar
  • 1 Cup water
  • 1 Cup walnuts, minced

Instructions

  1. Prepare the Dough: In a large bowl, beat together the butter, 1 cup of white sugar, and brown sugar until well combined. Add the whisked eggs, vanilla extract, flour, salt, and baking soda. Mix well and set the dough aside.
  2. Make the Filling: In a saucepan, combine the minced dates, 0.5 cup of sugar, water, and minced walnuts. Cook and stir over medium heat until the mixture thickens. Allow the filling to cool. If needed, add additional water to make the mixture spreadable.
  3. Roll the Dough: Divide the dough into four parts. Roll out each piece on a floured surface to a 1/2-inch thickness. Spread the cooled filling over the dough. Roll up each piece jelly-roll style, close the ends, and place the rolls on cookie sheets. Refrigerate the dough until cold, about 1 hour.
  4. Bake the Cookies: Preheat the oven to 400 degrees F (205 degrees C). Slice the chilled rolls and bake in the preheated oven until the edges are golden brown, about 10 minutes.
