Instructions
- Preheat the oven to 325 degrees F (165 degrees C). In a medium bowl, mix together the butter, white sugar, and 1 cup of flour. Press this mixture into the bottom of an ungreased 9x13 inch pan.
- Bake the crust for 25 minutes in the preheated oven. Meanwhile, in a small saucepan, bring the apricots and water to a boil, and cook for 10 minutes. Drain, then set aside to cool.
- In a medium bowl, whisk the eggs and brown sugar together. Stir in 0.33 cup of flour, baking powder, salt, vanilla extract, and lemon juice. Fold in the walnuts and apricots. Stir in the coconut, if desired. Pour this mixture over the prepared crust.
- Bake for an additional 20 minutes in the preheated oven, or until firm. Allow to cool, then dust with confectioners' sugar before cutting into squares.
