Ingredients
- Spray baking spray with flour
- 20 Ounces (oz) crushed pineapple in syrup, drained
- 0.25 Cups water
- 1 Cup light brown sugar, packed
- 6 Tablespoons (tbsp) unsalted butter
- 0.5 Teaspoons (tsp) cinnamon, ground
- 0.25 Teaspoons (tsp) vanilla extract
- 1 15.25 Ounces (oz) yellow cake mix, packaged
- 3 Large eggs
- 0.5 Cup vegetable oil
- Sweetened whipped cream, for serving
- Pinch maraschino cherries, to taste (optional)
- Pinch pecans, torn (optional)
Steps
- Preheat the oven to 350°F (175°C). Spray a 13 x 9-inch baking pan with baking spray. Line the bottom with parchment paper and lightly spray the parchment. Set aside.
- Drain the pineapple into a fine-mesh sieve set over a medium bowl; reserve 0.75 cups of pineapple juice in a measuring cup with a spout. Whisk in the water and set aside.
- In a small saucepan, combine brown sugar and butter. Cook over medium heat, stirring often, until the butter melts and the sugar mixture is well combined, about 3 minutes. Remove from heat and stir in cinnamon and vanilla.
- Spread the brown sugar mixture evenly in the prepared pan. Spoon and spread the drained pineapple in an even layer over the brown sugar mixture.
- Prepare the cake mix as directed in a large bowl, substituting the pineapple juice mixture for the water. Spread the batter evenly over the pineapple layer.
- Bake in the preheated oven until a wooden pick inserted in the center comes out clean, about 30 minutes. Run a butter knife around the edge of the pan. Carefully place a heatproof platter over the pan and invert the cake onto the platter. Remove and discard the parchment paper. Use any leftover pineapple or brown sugar mixture to patch any bald spots on the cake. Let cool for 30 minutes before slicing and serving.
- Serve warm or at room temperature with whipped cream. Garnish with cherries and pecans if desired.
Enjoy this delightful Tropical Pineapple Bliss Cake with your loved ones!
