Ingredients

  • 0.33 Cup white sugar
  • 0.33 Cup water
  • 1 Cup raisins
  • 1.5 Teaspoons butter, melted
  • 1 Pinch salt, to taste
  • 2.25 Cups all-purpose flour, sifted
  • 0.25 Teaspoon ground cinnamon
  • 0.25 Teaspoon ground allspice
  • 0.25 Teaspoon ground cloves
  • 0.25 Teaspoon salt
  • 2 Teaspoons baking powder
  • 0.5 Cup shortening
  • 1 Cup white sugar
  • 2 Large eggs
  • 0.5 Teaspoon vanilla extract
  • 1 Tablespoon milk

Steps

  1. In a small saucepan over medium heat, combine 0.33 cups of sugar, water, raisins, butter, and a pinch of salt. Bring to a boil and cook until the mixture thickens and you can see the bottom of the pan while stirring. Remove from heat and let cool.
  2. Preheat your oven to 375 degrees F (190 degrees C).
  3. In a bowl, sift together the flour, cinnamon, allspice, cloves, salt, and baking powder. Set aside.
  4. In a medium bowl, cream the shortening and 1 cup of sugar until smooth. Stir in the eggs and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the creamed mixture, mixing until just blended. Stir in the milk to form a soft dough.
  6. On a lightly floured surface, roll the dough out to a thickness of 1/4 to 1/8 inch. Cut into 2 1/2 inch circles.
  7. Place a teaspoon of the cooled raisin filling onto the center of half of the circles. Cover with the remaining circles and press the edges together with the tines of a fork to seal.
  8. Place the cookies on ungreased baking sheets. Sprinkle the tops with a little sugar for added sweetness and texture.
  9. Bake in the preheated oven for 10 to 12 minutes, or until the edges are lightly golden. Allow to cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
