Ingredients
- 0.33 Cup white sugar
- 0.33 Cup water
- 1 Cup raisins
- 1.5 Teaspoons butter, melted
- 1 Pinch salt, to taste
- 2.25 Cups all-purpose flour, sifted
- 0.25 Teaspoon ground cinnamon
- 0.25 Teaspoon ground allspice
- 0.25 Teaspoon ground cloves
- 0.25 Teaspoon salt
- 2 Teaspoons baking powder
- 0.5 Cup shortening
- 1 Cup white sugar
- 2 Large eggs
- 0.5 Teaspoon vanilla extract
- 1 Tablespoon milk
Steps
- In a small saucepan over medium heat, combine 0.33 cups of sugar, water, raisins, butter, and a pinch of salt. Bring to a boil and cook until the mixture thickens and you can see the bottom of the pan while stirring. Remove from heat and let cool.
- Preheat your oven to 375 degrees F (190 degrees C).
- In a bowl, sift together the flour, cinnamon, allspice, cloves, salt, and baking powder. Set aside.
- In a medium bowl, cream the shortening and 1 cup of sugar until smooth. Stir in the eggs and vanilla extract until well combined.
- Gradually add the dry ingredients to the creamed mixture, mixing until just blended. Stir in the milk to form a soft dough.
- On a lightly floured surface, roll the dough out to a thickness of 1/4 to 1/8 inch. Cut into 2 1/2 inch circles.
- Place a teaspoon of the cooled raisin filling onto the center of half of the circles. Cover with the remaining circles and press the edges together with the tines of a fork to seal.
- Place the cookies on ungreased baking sheets. Sprinkle the tops with a little sugar for added sweetness and texture.
- Bake in the preheated oven for 10 to 12 minutes, or until the edges are lightly golden. Allow to cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
