Ingredients

  • 1 9x9 Inch (in) pan cornbread, crumbled
  • 1 8 Ounces (oz) package herb-seasoned dry bread stuffing mix
  • 2 Tablespoons (tbsp) fresh parsley, minced
  • 0.5 Teaspoons (tsp) ginger, ground
  • 0.5 Teaspoons (tsp) salt
  • 0.75 Cups butter, melted
  • 1 Cup celery, minced
  • 1 Cup onion, minced
  • 2 Cups apples, diced
  • 0.5 Cup pecans, chopped
  • 2 Cups apple juice
  • 3 Whole eggs, whisked

Steps

  1. Preheat the oven to 350 degrees F (175 degrees C). Butter a 3-quart casserole dish.
  2. Melt the butter in a heavy saucepan and sauté the celery and onion for 8 to 10 minutes, or until tender.
  3. In a large bowl, combine the crumbled cornbread, stuffing mix, parsley, ginger, and salt.
  4. Mix in the sautéed celery and onion, apples, pecans, apple juice, and eggs.
  5. Spoon the dressing mixture into the prepared casserole dish.
  6. Bake for 30 to 35 minutes in the preheated oven, or until heated through and lightly browned on top.
