- 1 Large onion, minced, divided
- 3 Tablespoons (tbsp) kosher salt
- 3 Whole jalapeño peppers, divided

- 2 Cups reserved cooking liquid from beef tongue
- 1 Pinch fresh cilantro, torn (optional)

Steps
- Prepare the Beef Tongue: Place the beef tongue, 1/2 of the minced onion, 3 tablespoons of salt, 1 jalapeño, and garlic cloves in a large pot. Fill with water to cover the tongue by several inches. Bring to a boil over high heat, then reduce to medium-low, cover, and simmer for 3 to 4 hours until the tongue is very tender. Remove the tongue from the pot and let it cool. Reserve the cooking liquid. Once cool enough to handle, peel off the tough outer skin and shred the meat using two forks.
- Make the Tomato Salsa: In a large saucepan, bring water to a boil over high heat. Add the whole tomatoes and the remaining 2 jalapeños. Boil until tender. Transfer the tomatoes and jalapeños to a blender and purée until smooth. For a milder salsa, remove the seeds from the jalapeños before blending.
- Combine and Cook: Heat the vegetable oil in a large skillet over medium heat. Add the remaining 1/2 minced onion and cook until softened and translucent, about 5 minutes. Cook and stir until the liquid has evaporated, leaving the meat moist and flavorful, about 20 minutes.
