Ingredients

  • 8 Cups water
  • 6 Large potatoes, peeled
  • 1 Whole onion, minced
  • 4 Stalks celery, minced
  • 1 Pinch salt, to taste
  • 1 Pinch pepper, to taste
  • 4 Cups half-and-half
  • 2 Tablespoons margarine
  • 22 Ounces condensed cream of Cheddar cheese soup (two 11 oz cans)

Steps

  1. In a large stock pot, add water, potatoes, onion, and celery. Season with salt and pepper. Bring to a boil, cover, and simmer until potatoes and vegetables are tender.
  2. Once tender, mash the soup with a potato masher, and add margarine and half-and-half.
  3. Gradually bring the mixture to a simmer. Add the condensed cream of Cheddar cheese soup and blend well.
  4. Serve the soup hot, accompanied by buttered sourdough toast for a complete meal.
