Ingredients

  • 1 Large spaghetti squash
  • 3 Tablespoons (tbsp) olive oil, divided
  • 2 Large chicken breasts, diced
  • 2 Shallots, minced
  • 6 Cloves garlic, minced
  • 1 Teaspoon (tsp) salt
  • 1 Pinch black pepper, grated
  • 2 Teaspoons (tsp) Italian seasoning
  • 3 Cups broccoli florets
  • 4 Tablespoons (tbsp) cream cheese
  • 0.5 Cup plain Greek yogurt
  • 0.5 Cup Parmesan cheese, shredded
  • 1.5 Cups mozzarella cheese, shredded

Steps

  1. Preheat oven to 400°F and line a large baking sheet with parchment paper. Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with 2 tablespoons of olive oil, sprinkle with salt and pepper, and place cut-side down on the baking sheet. Bake for 45 minutes to 1 hour, until tender. Cool slightly, then scrape out the strands with a fork.
  2. Preheat oven to 350°F. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add chicken, season with salt and pepper, and cook for 5-6 minutes. Remove chicken and set aside. In the same skillet, add shallots and sauté for 2-3 minutes. Add garlic, Italian seasoning, salt, and pepper, cooking until fragrant. Add broccoli and 1-2 tablespoons of water, cover, and steam for 2 minutes. Return chicken to the skillet and cook for another 1-2 minutes.
  3. In a large mixing bowl, combine cream cheese and Greek yogurt. Add chicken, broccoli, Parmesan, and half of the mozzarella cheese. Mix well. Add spaghetti squash strands and gently mix to combine.
  4. Divide the mixture between the spaghetti squash halves. Top with remaining mozzarella cheese. Place on a baking sheet, cover with foil, and bake for 15 minutes. Remove foil and bake for an additional 5-10 minutes until cheese is golden and bubbly.
  5. Garnish with fresh parsley or red pepper flakes if desired. Enjoy as a main dish or pair with a fresh salad or roasted vegetables.
