Ingredients

  • 1 Teaspoon (tsp) garlic, minced
  • 0.33 Cups onion, minced
  • 1 14.5 Ounces (oz) can diced tomatoes with juice
  • 0.5 Teaspoons (tsp) sugar
  • 0.25 Cups heavy cream
  • 1 Pinch salt, to taste
  • 1 Pinch pepper, to taste
  • 0.33 Cups fine dry bread crumbs
  • 2 Tablespoons (tbsp) Parmesan cheese, grated
  • 0.5 Teaspoons (tsp) dried oregano
  • 1 Large egg, whisked
  • 2 Tablespoons (tbsp) milk
  • 3 5 Ounces (oz) skinless, boneless chicken breast halves, tenderized
  • 3 Tablespoons (tbsp) olive oil
  • 0.75 Cups Mozzarella cheese, shredded
  • 1 Tablespoon (tbsp) Parmesan cheese, grated

Steps

  1. Melt the butter in a saucepan over medium heat. Add the minced garlic and onion, cooking until the onion is translucent, about 2 minutes.
  2. Pour in the diced tomatoes and sugar. Increase the heat to medium-high and bring to a simmer. Reduce the heat to medium-low and simmer for 10 minutes, stirring occasionally.
  3. Stir in the heavy cream and season with salt and pepper. Simmer for an additional 3 minutes. Lower the heat and keep the sauce warm.
  4. In a bowl, combine the bread crumbs, 2 tablespoons of Parmesan cheese, and dried oregano. In another bowl, whisk together the egg and milk.
  5. Dip the chicken breasts into the egg mixture, then coat with the breadcrumb mixture, shaking off any excess.
  6. Heat the olive oil in a large skillet over medium heat. Cook the chicken breasts on both sides until they reach an internal temperature of 160°F (70°C) and the crust is golden brown, about 10 minutes.
  7. To serve, spoon the sauce over the chicken and top with Mozzarella and the remaining Parmesan cheese. Let stand for a few minutes until the cheese melts from the heat of the sauce. Enjoy!
