  • 1 Pound (lb) beef, ground
  • 8 Ounces (oz) macaroni
  • 0.5 Cups onion, minced
  • 1 10.75 Ounces (oz) can tomato soup, condensed
  • 1 14.5 Ounces (oz) can tomatoes, diced
  • 1 1.25 Ounces (oz) package taco seasoning mix, packaged
  • 2 Ounces (oz) Cheddar cheese, shredded
  • 2 Ounces (oz) Monterey Jack cheese, shredded
  • 1 Cup tortilla chips, crushed
  • 0.5 Cups sour cream (optional)
  • 0.25 Cups green onions, minced

Steps

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. Cook the macaroni in a large pot of boiling water until al dente. Drain and set aside.
  3. In a large skillet, cook and stir the ground beef and minced onion over medium heat until the beef is browned.
  4. Mix in the condensed tomato soup, diced tomatoes, and packaged taco seasoning mix. Stir in the cooked macaroni.
  5. Spoon the beef and pasta mixture into a 9x13 inch baking dish.
  6. Sprinkle the crushed tortilla chips and shredded cheeses on top of the mixture.
