  • 0.5 Cups onion, minced
  • 2 Pounds (lb) beef, ground
  • 0.25 Cups chili powder
  • 1 Teaspoon (tsp) cinnamon, ground
  • 1 Teaspoon (tsp) cumin, ground
  • 0.25 Teaspoon (tsp) allspice, ground
  • 0.25 Teaspoon (tsp) cloves, ground
  • 1 Whole bay leaf
  • 0.5 Ounces (oz) chocolate, unsweetened
  • 2 10.5 Ounces (oz) cans beef broth
  • 1 15 Ounces (oz) can tomato sauce
  • 2 Tablespoons (tbsp) cider vinegar
  • 0.25 Teaspoon (tsp) cayenne pepper, ground
  • 0.25 Cups Cheddar cheese, shredded

Steps

  1. Heat the vegetable oil in a large saucepan over medium heat. Add the minced onion and cook, stirring frequently, until tender, about 6 minutes.
  2. Add the ground beef, in batches if necessary, and cook, breaking it up with a wooden spoon, until browned.
  3. Stir in the chili powder, cinnamon, cumin, allspice, cloves, bay leaf, chocolate, beef broth, tomato sauce, cider vinegar, and cayenne pepper. Mix well.
  4. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1.5 hours, stirring occasionally.
  5. For best results, refrigerate the chili overnight.
  6. Remove the bay leaf before reheating gently over medium heat.
  7. Serve the chili over hot, drained spaghetti and top with shredded Cheddar cheese.
