Ingredients

  • 1 Tablespoon (tbsp) ground cinnamon
  • 1 Tablespoon (tbsp) cracked black pepper
  • 1 Tablespoon (tbsp) garlic powder
  • 1 Tablespoon (tbsp) chili powder
  • 1 Pinch cayenne pepper, to taste
  • 0.25 Cups dark brown sugar
  • 4 8 Ounces (oz) flat iron steaks
  • 2 Tablespoons (tbsp) olive oil
  • 4 Cloves garlic, minced
  • 0.25 Cups red onion, minced
  • 1 Cup Cabernet Sauvignon
  • 1 Cup crumbled Gorgonzola cheese
  • 2 Tablespoons (tbsp) fresh basil, torn

Steps

  1. Preheat your oven to 400 degrees F (200 degrees C). Prepare an outdoor grill for medium-high heat and lightly oil the grate.
  2. In a small bowl, mix together the cinnamon, black pepper, garlic powder, chili powder, cayenne pepper, and brown sugar. Generously sprinkle this spice rub over the flat iron steaks, pressing it into the meat to ensure it adheres well. Set aside.
  3. Heat the olive oil in a skillet over medium heat. Add the minced garlic and red onion, cooking until the onion is soft and translucent, about 5 minutes. Pour in the red wine and bring to a boil, reducing until the wine has nearly evaporated, about 5 more minutes. Remove the onion mixture from the skillet and set aside.
  4. Grill the flat iron steaks on the preheated grill for 4 minutes on each side. Transfer the steaks to the skillet, topping them with the onion mixture and crumbled Gorgonzola cheese.
  5. Place the skillet in the preheated oven and bake until the cheese has melted and the steaks reach your desired level of doneness, approximately 5 minutes for medium.
  6. Remove from the oven and let the steaks rest for a few minutes. Garnish with torn fresh basil before serving.
