  • 5 Fresh curry leaves
  • 1 Medium serrano pepper, sliced
  • 1 Clove garlic, minced
  • 1 Tablespoon (tbsp) curry powder
  • 0.5 Teaspoons (tsp) fenugreek seeds
  • 0.25 Teaspoons (tsp) turmeric, ground
  • 1 Pinch salt, to taste
  • 1 Pound (lb) green beans, trimmed
  • 0.5 Cups coconut milk
  • 2 Tablespoons (tbsp) lime juice

Steps

  1. Heat the vegetable oil in a saucepan over medium-high heat. Add the sliced onion, curry leaves, serrano pepper, and minced garlic. Cook and stir until the onion turns golden brown.
  2. Stir in the curry powder, fenugreek seeds, ground turmeric, and salt. Cook for an additional 3 minutes to release the spices' aroma.
