- 2 Whole red onions, sliced
- 2 Whole garlic cloves, minced
- 3 Whole red bell peppers, minced
- 2 Whole yellow bell peppers, minced
- 0.5 Teaspoons (tsp) kosher salt
- 0.5 Teaspoons (tsp) black pepper, ground
- 0.5 Cups fresh basil leaves, torn
- 0.5 Cups Parmesan cheese, grated
Steps
- Bring a large pot of lightly salted water to a boil. Add the penne pasta and cook for 8 to 10 minutes or until al dente. Drain and set aside, reserving 1 cup of pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the sliced red onions and sauté for 3 minutes until they begin to soften.
- Add the minced garlic to the skillet and sauté for an additional 2 minutes until fragrant.
