- 2 Skinless, boneless chicken breasts
- 1 Stalk celery, sliced
- 1 4.5 Ounces (oz) can mushrooms, drained
- 1 12 Fluid Ounces (fl oz) can evaporated milk
- 8 Ounces (oz) processed cheese food (e.g., Velveeta), sliced
- 0.5 Cup butter, melted
- 0.33 Cup dry sherry
- 1 Pinch salt, to taste
- 1 Pinch black pepper, ground
- 0.25 Cup cornflakes cereal, crushed
- 1 Pinch paprika, to taste
- 9 Ounces (oz) egg noodles, cooked and drained
Steps
- Boil the chicken breasts and sliced celery in 4 cups of water for about 30 minutes. Remove from heat and let the chicken cool. Once cooled, shred the chicken and set aside.
- In a large skillet, melt the butter. Add the drained mushrooms to the skillet. Heat thoroughly, seasoning with salt and pepper.
- Add the evaporated milk, reserved mushroom liquid, and sherry to the skillet, stirring well. Gradually add the cheese slices, stirring until melted and blended. Add the shredded chicken and bring the mixture to a slow boil.
- Preheat the oven to 350°F (175°C). Grease a 9x13x2-inch glass baking dish.
- Place the cooked noodles in the baking dish to a depth of about 1.5 inches. Pour the chicken mixture over the noodles and stir to coat.
- Top with crushed cornflakes and paprika. Cover the dish and bake for 25 minutes.
- Uncover the dish and bake for an additional 5 minutes. Serve warm.
