  • 1 Tablespoon (tbsp) garlic, minced
  • 0.125 Cups low-sodium chicken broth
  • 0.5 Cups Parmesan cheese, grated
  • 0.5 Teaspoons (tsp) black pepper, ground
  • 1 Teaspoon (tsp) Italian seasoning
  • 10 Ounces (oz) fresh mushrooms, sliced
  • 6 Ounces (oz) shiitake mushrooms, sliced
  • 0.5 Cups red onion, diced
  • 0.25 Cups bacon bits
  • 1 Pound (lb) penne pasta

Steps

  1. Cook the penne pasta according to the package directions.
  2. While the pasta is cooking, combine the spinach, tofu, lemon juice, garlic, chicken broth, Parmesan cheese, black pepper, and Italian seasoning in a food processor or blender. Process until smooth and set aside.
  3. Spray a large non-stick sauté pan with cooking spray. Over medium heat, cook the onions and mushrooms until tender.
