- 2 Tablespoons (tbsp) fresh lemon juice
- 1 Tablespoon (tbsp) garlic, minced
- 0.125 Cups low-sodium chicken broth
- 0.5 Cups Parmesan cheese, grated
- 0.5 Teaspoons (tsp) black pepper, ground
- 1 Teaspoon (tsp) Italian seasoning
- 10 Ounces (oz) fresh mushrooms, sliced
- 6 Ounces (oz) shiitake mushrooms, sliced
- 0.5 Cups red onion, diced
- 0.25 Cups bacon bits
- 1 Pound (lb) penne pasta
Steps
- Cook the penne pasta according to the package directions.
- While the pasta is cooking, combine the spinach, tofu, lemon juice, garlic, chicken broth, Parmesan cheese, black pepper, and Italian seasoning in a food processor or blender. Process until smooth and set aside.
