- 12 oz rigatoni pasta (gluten-free if needed)
- 1 Cup heavy cream
- 1 Cup crushed tomatoes
- 0.5 Cup vodka
- 0.5 Cup grated Parmesan cheese
- 0.5 Cup green peas
- 4 oz prosciutto, sliced
- 1 Teaspoon (tsp) garlic powder
- 1 Teaspoon (tsp) sugar
- 1 Teaspoon (tsp) salt
- 0.5 Teaspoon (tsp) black pepper
- 0.5 Teaspoon (tsp) red pepper flakes
- 0.5 Cup roasted red peppers, drained and cut into strips
- 2 Tablespoons (tbsp) fresh parsley, chopped
Steps
- Drain the roasted red peppers and cut them into strips.
- In a saucepan, combine the prosciutto, heavy cream, crushed tomatoes, vodka, roasted peppers, parsley, garlic powder, sugar, salt, black pepper, and red pepper flakes. Cover and cook over medium heat, stirring often, until the sauce comes to a boil. Reduce the heat and simmer for 30 minutes.
