- 0.5 Cups (cups) bread crumbs, seasoned
- 5 Tablespoons (tbsp) Parmesan cheese, grated
- 2 Teaspoons (tsp) oregano, divided
- 1 Pinch salt, to taste
- 1 Pinch black pepper, ground
- 12 Ounces (oz) firm tofu, packaged
- 2 Tablespoons (tbsp) olive oil
- 8 Ounces (oz) tomato sauce, packaged
- 0.5 Teaspoons (tsp) basil, dried
- 1 Clove garlic, minced
- 4 Ounces (oz) mozzarella cheese, shredded
Steps
- In a small bowl, combine the bread crumbs, 2 tablespoons of grated Parmesan cheese, 1 teaspoon of oregano, salt, and black pepper.
- Slice the tofu into 1/4 inch thick slices and place them in a bowl of cold water. One at a time, press the tofu slices into the crumb mixture, turning to coat all sides.
- Heat olive oil in a medium skillet over medium heat. Cook the tofu slices until crisp on one side. Drizzle with a bit more olive oil, turn, and brown on the other side.
- In a separate bowl, combine the tomato sauce, basil, minced garlic, and remaining oregano. Place a thin layer of sauce in an 8-inch square baking pan. Arrange the tofu slices in the pan. Spoon the remaining sauce over the tofu.
- Top with shredded mozzarella and the remaining 3 tablespoons of grated Parmesan cheese.
- Bake at 400 degrees F (205 degrees C) for 20 minutes.
