Ingredients
- 2 Pounds (lb) beef chuck pot roast
- 2 Whole red bell peppers, sliced
- 2 Whole green bell peppers, sliced
- 1 Whole yellow onion, sliced
- 1 Whole sweet onion, sliced
- 3 Whole garlic cloves, minced
- 3 Ounces (oz) tomato paste
- 0.25 Cups red wine vinegar
- 0.125 Teaspoons (tsp) garlic powder
- 0.125 Teaspoons (tsp) seasoned salt
- 1 Pinch salt, to taste
- 1 Pinch ground black pepper, to taste
Steps
- Pierce the beef roast and place it into a slow cooker. Add the red and green bell peppers, yellow and sweet onions, and garlic cloves.
- Stir in the tomato paste and red wine vinegar. Sprinkle with garlic powder, seasoned salt, and add salt and black pepper to taste.
- Cover the slow cooker and cook on Low for 7 to 8 hours, until the beef is tender.
- Remove the beef from the slow cooker and shred it into long strands using two forks.
- Return the shredded beef to the slow cooker and mix until well combined with the vegetables.
- Cover and continue cooking on Low for an additional 30 minutes, until the meat and vegetables are very tender.
