Ingredients

  • 2 Pounds (lb) beef chuck pot roast
  • 2 Whole red bell peppers, sliced
  • 2 Whole green bell peppers, sliced
  • 1 Whole yellow onion, sliced
  • 1 Whole sweet onion, sliced
  • 3 Whole garlic cloves, minced
  • 3 Ounces (oz) tomato paste
  • 0.25 Cups red wine vinegar
  • 0.125 Teaspoons (tsp) garlic powder
  • 0.125 Teaspoons (tsp) seasoned salt
  • 1 Pinch salt, to taste
  • 1 Pinch ground black pepper, to taste

Steps

  1. Pierce the beef roast and place it into a slow cooker. Add the red and green bell peppers, yellow and sweet onions, and garlic cloves.
  2. Stir in the tomato paste and red wine vinegar. Sprinkle with garlic powder, seasoned salt, and add salt and black pepper to taste.
  3. Cover the slow cooker and cook on Low for 7 to 8 hours, until the beef is tender.
  4. Remove the beef from the slow cooker and shred it into long strands using two forks.
  5. Return the shredded beef to the slow cooker and mix until well combined with the vegetables.
  6. Cover and continue cooking on Low for an additional 30 minutes, until the meat and vegetables are very tender.
  7. Serve hot and enjoy the rich, savory flavors of this Cuban classic.
