  • 3 Heads garlic, peeled
  • 1 Tablespoon (tbsp) black pepper, ground
  • 1 Tablespoon (tbsp) ground cumin
  • 1 Tablespoon (tbsp) dried oregano
  • 2 Tablespoons (tbsp) salt
  • 2 Cups fresh lemon juice
  • 1 Cup dry white wine
  • 6 Fluid Ounces (fl oz) frozen orange juice concentrate, thawed
  • 1 16 Pounds (lb) turkey

Steps

  1. Crush the peeled garlic cloves and place them into a large bowl. Season with black pepper, ground cumin, dried oregano, and salt.
  2. Pour in the fresh lemon juice, dry white wine, and thawed orange juice concentrate. Whisk together until well mixed.
  3. Using a sharp paring knife, pierce the turkey breast, thighs, and legs to create holes for the marinade to penetrate.
  4. Pour the marinade over the turkey and into the holes. Stuff garlic pieces into the holes. Cover the turkey well and refrigerate overnight to marinate.
  5. Preheat the oven to 325 degrees F (165 degrees C).
  6. Roast the turkey in the preheated oven until the internal temperature of the thickest part of the thigh measures 180 degrees F (80 degrees C), about 5 hours.
  7. Baste the turkey every 30 to 45 minutes. Once the breast has browned, cover it loosely with aluminum foil to prevent it from burning.
