  • Spray cooking spray
  • 2 Pounds (lb) salmon fillet, tenderized
  • 0.5 Cups crumbled feta cheese
  • 0.33 Cups light mayonnaise
  • 1 Tablespoon (tbsp) light cream cheese
  • 1 Tablespoon (tbsp) Dijon mustard
  • 1 Tablespoon (tbsp) onion powder
  • 1 Teaspoon (tsp) balsamic vinegar
  • 1 Teaspoon (tsp) garlic powder
  • 0.5 Teaspoon (tsp) salt
  • 0.5 Teaspoon (tsp) black pepper
  • 0.5 Teaspoon (tsp) ground paprika
  • 0.33 Cups panko (Japanese bread crumbs)

Steps

  1. Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil and spray it with a light coating of cooking spray. Place the salmon fillet on top.
  2. In a bowl, mix together the feta cheese, mayonnaise, cream cheese, Dijon mustard, onion powder, balsamic vinegar, garlic powder, salt, black pepper, and paprika until smooth.
  3. Spread the feta mixture evenly over the salmon fillet.
  4. Sprinkle the bread crumbs over the top of the salmon, ensuring it is completely covered.
