Ingredients

  • 3 Tablespoons vegetable oil
  • 2 Cups celery, julienned
  • 2 Whole onions, minced
  • 4 Cloves garlic, minced
  • 1 Teaspoon white sugar
  • 2 Tablespoons all-purpose flour
  • 1 Teaspoon salt
  • 1 Teaspoon black pepper, ground
  • 0.5 Teaspoon cayenne pepper
  • 2 14.5 Ounces cans crushed tomatoes
  • 1 15 Ounces can tomato sauce
  • 1 Whole bay leaf
  • 1 Tablespoon hot pepper sauce
  • 2 Pounds medium shrimp, peeled

Steps

  1. Heat the vegetable oil in a Dutch oven over medium heat. Sauté the celery, onions, and garlic until the onions are pearly white and the celery begins to soften.
  2. Mix in the sugar, flour, salt, black pepper, and cayenne pepper. Add the crushed tomatoes, tomato sauce, bay leaf, and hot pepper sauce. Bring the mixture to a boil, then reduce the heat to low.
  3. Let the mixture simmer for 30 minutes, stirring occasionally.
  4. About 15 minutes before serving, add the shrimp to the pot and stir well. If necessary, increase the heat to medium-low to ensure the Creole is bubbling but not burning. Remove the bay leaf before serving. Serve when the shrimp is pink and thoroughly cooked.
