Ingredients
- 3 Tablespoons vegetable oil
- 2 Cups celery, julienned
- 2 Whole onions, minced
- 4 Cloves garlic, minced
- 1 Teaspoon white sugar
- 2 Tablespoons all-purpose flour
- 1 Teaspoon salt
- 1 Teaspoon black pepper, ground
- 0.5 Teaspoon cayenne pepper
- 2 14.5 Ounces cans crushed tomatoes
- 1 15 Ounces can tomato sauce
- 1 Whole bay leaf
- 1 Tablespoon hot pepper sauce
- 2 Pounds medium shrimp, peeled
Steps
- Heat the vegetable oil in a Dutch oven over medium heat. Sauté the celery, onions, and garlic until the onions are pearly white and the celery begins to soften.
- Mix in the sugar, flour, salt, black pepper, and cayenne pepper. Add the crushed tomatoes, tomato sauce, bay leaf, and hot pepper sauce. Bring the mixture to a boil, then reduce the heat to low.
- Let the mixture simmer for 30 minutes, stirring occasionally.
- About 15 minutes before serving, add the shrimp to the pot and stir well. If necessary, increase the heat to medium-low to ensure the Creole is bubbling but not burning. Remove the bay leaf before serving. Serve when the shrimp is pink and thoroughly cooked.
