Ingredients

  • 1 Tablespoon (tbsp) vegetable oil
  • 1 Medium onion, minced
  • 2 Whole garlic cloves, minced
  • 1 15 Ounces (oz) can black beans, drained
  • 1 Medium green bell pepper, minced
  • 2 Medium tomatoes, minced
  • 5 Ounces (oz) frozen corn, packaged
  • 12 12 Inch flour tortillas
  • 1 Cup Cheddar cheese, shredded
  • 0.25 Cup vegetable oil

Steps

  1. Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Sauté the minced onion and minced garlic until they are soft and fragrant.
  2. Add the black beans, minced bell pepper, minced tomatoes, and frozen corn to the skillet. Cook the mixture until it is heated through.
  3. Spread the bean and vegetable mixture evenly over 6 of the flour tortillas. Sprinkle each with an equal amount of shredded Cheddar cheese, then top with the remaining tortillas to form quesadillas.
  4. Heat 0.25 cup of vegetable oil in a large skillet over medium-high heat. Place the quesadillas in the skillet and cook, turning once, until the cheese is melted and both sides are lightly browned.
