Ingredients

  • 1 1/8 Cups (c) green lentils
  • 2 1/4 Cups (c) water
  • 6 Slices white bread, torn
  • 2 Whole eggs
  • 1 Cup (c) vegetable broth
  • 2 Tablespoons (tbsp) tomato paste
  • 0.5 Teaspoons (tsp) dried basil
  • 0.25 Teaspoons (tsp) garlic powder
  • 0.5 Teaspoons (tsp) black pepper, ground
  • 1 Teaspoon (tsp) dried parsley
  • 1 Tablespoon (tbsp) olive oil
  • 0.5 Packet dry vegetable soup mix
  • 0.33 Cup (c) dried bread crumbs

Steps

  1. Combine lentils and water in a small saucepan. Bring to a boil, then reduce heat and simmer until tender, about 40 minutes.
  2. Preheat the oven to 400 degrees F (205 degrees C). Grease a 9x5 inch loaf pan.
  3. In a large bowl, mix together 2 cups of cooked lentils, torn bread pieces, eggs, vegetable broth, tomato paste, dried basil, garlic powder, black pepper, dried parsley, olive oil, and dry vegetable soup mix.
  4. Spread the mixture into the prepared loaf pan.
  5. Bake for 40 minutes.
  6. Sprinkle the top with dried bread crumbs and continue baking for another 10 minutes.
  7. Let the loaf sit for 10 minutes before serving. Enjoy your herb-infused lentil loaf!
