Ingredients
- 1 Pound (lb) pork shoulder, divided
- 2 Tablespoons (tbsp) Mazola® Corn Oil
- 0.25 Cup yellow onion, minced
- 2 Whole garlic cloves, minced
- 1 Tablespoon (tbsp) Spice Islands® Chili Powder
- 0.25 Teaspoon (tsp) Spice Islands® Chipotle Chile Powder
- 0.5 Teaspoon (tsp) cumin, ground
- 0.5 Teaspoon (tsp) coriander, ground
- 2 Whole tomatillos, minced
- 0.5 Cup tomatoes, minced
- 0.25 Cup fresh cilantro, torn
- 1 Whole lime, juiced
- 4 Corn tortillas
- 1 Pinch salt, to taste
- 1 Pinch pepper, to taste
Steps
- Season the pork cubes with salt and pepper.
- Heat the corn oil in a large skillet or Dutch oven over medium-high heat. Add the pork cubes and sear until browned on all sides, about 3-5 minutes.
- Add the minced onions, minced garlic, chili powder, chipotle chile powder, cumin, and coriander to the skillet. Sauté for an additional 2 minutes until the spices are fragrant.
- Pour in enough water to barely cover the pork. Bring to a boil, then reduce the heat to low, cover, and simmer for 30 minutes.
- Remove the lid and continue to simmer until the liquid has evaporated and the pork is tender, about 45 minutes. Stir occasionally to prevent sticking.
- In a small bowl, combine the minced tomatillos, minced tomatoes, torn cilantro, and lime juice. Season with salt and pepper to taste.
- Warm the corn tortillas in a dry skillet or microwave.
- Assemble the carnitas by placing an equal amount of pork on each tortilla. Top with the cilantro tomatillo salsa.
- Serve immediately, garnished with additional cilantro and lime wedges if desired.
