- 2 Medium zucchini, divided
- 1 Red onion, minced
- 1 10 Ounces (oz) box frozen corn, drained
- 1 Tablespoon (tbsp) olive oil
- 8 Flour tortillas
- 1 Cup Monterey Jack cheese, shredded
- 3 Tablespoons (tbsp) fresh cilantro, minced
Steps
- In a medium bowl, combine Worcestershire sauce, lime juice, soy sauce, and chili powder. Add shrimp and marinate for 15 minutes.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Cook zucchini, onion, and corn for 10 minutes or until vegetables are tender. Cover to keep warm and set aside.
