- 2 Pounds (lbs) tomatoes, peeled
- 8 Ounces (oz) angel hair pasta, packaged
- 1 Tablespoon (tbsp) olive oil
- 4 Cloves garlic, minced
- 1 Tablespoon (tbsp) tomato paste
- 1 Pinch salt, to taste
- 1 Pinch ground black pepper, to taste
- 1 Tablespoon (tbsp) fresh basil, torn
- 0.25 Cups Parmesan cheese, grated
Steps
- Place the tomatoes in a large pot and cover with cold water. Bring to a boil, then drain and cover again with cold water. Peel the skin off the tomatoes and cut them into small pieces.
- In another large pot, bring lightly salted water to a boil. Cook the angel hair pasta in the boiling water, stirring occasionally, until tender yet firm to the bite, about 4 to 5 minutes.
- Meanwhile, heat olive oil in a large skillet or pan, ensuring there is enough to cover the bottom. Sauté the garlic until opaque but not browned. Stir in the tomato paste, then immediately add the tomatoes, salt, and pepper. Reduce the heat and simmer until the pasta is ready, adding the basil at the end.
