- 2 Cups wild rice
- 6 Cups water
- 4 Cups chicken broth
- 1 Cup frozen corn kernels
- 0.5 Cup green onions, minced
- 2 Tablespoons red bell pepper, minced
- 2 Tablespoons green bell pepper, minced
- 1 Tablespoon fresh parsley, minced
- 1 Teaspoon dried tarragon
- 2 Tablespoons cornstarch
- 2 Tablespoons water
Steps
- In a medium saucepan, cook the wild rice in 6 cups of water until tender.
- In a large saucepan or stockpot, combine the chicken broth, cooked rice, corn, green onions, red and green bell peppers, parsley, and tarragon. Mix well and cook over medium heat until the mixture boils.
