Ingredients

  • 2 Tablespoons (tbsp) butter, melted
  • 2 Pounds (lb) fresh cod fillets
  • 1 4 Ounces (oz) package Boursin cheese with herbs, packaged
  • 1 14.5 Ounces (oz) can diced tomatoes with garlic, onion, and peppers, drained
  • 0.5 Teaspoon (tsp) kosher salt
  • 0.5 Teaspoon (tsp) black pepper, ground
  • 2 Tablespoons (tbsp) Parmesan cheese, shredded
  • 1 Tablespoon (tbsp) fresh parsley, minced
  • 1 Teaspoon (tsp) lemon zest

Steps

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. Pour 1 tablespoon of the melted butter into a baking dish to coat the bottom.
  3. Arrange the cod fillets in the dish, ensuring they are not overlapping. Pat the fillets dry with a paper towel to ensure a good sear.
  4. Spread the Boursin cheese evenly over the top of each fillet.
  5. Evenly distribute the drained diced tomatoes over the cheese-covered fillets.
  6. Season the fillets with kosher salt and ground black pepper to taste.
  7. Sprinkle the Parmesan cheese over the top, followed by the minced parsley and lemon zest for added freshness and aroma.
  8. Drizzle the remaining tablespoon of melted butter over the top of the fillets.
  9. Bake the cod in the preheated oven for 25 minutes, or until the fish is opaque and flakes easily with a fork.
  10. For a golden finish, broil on high for an additional 2-3 minutes, watching closely to prevent burning.
  11. Serve immediately, garnished with additional parsley if desired. Enjoy your gourmet meal!
