  • 5 Pounds (lb) pork roast, trimmed
  • 3 Cloves garlic, sliced
  • 1 Teaspoon (tsp) salt
  • 0.5 Tablespoon (tbsp) black pepper, ground
  • 3 Whole bay leaves
  • 0.5 Cups cider vinegar
  • 1 Teaspoon (tsp) dried thyme

Steps

  1. Preheat the oven to 325 degrees F (165 degrees C).
  2. Pierce the top of the pork roast with a small knife and insert garlic slices into the cuts. Sprinkle the roast with salt and black pepper.
  3. Place bay leaves in the bottom of a roasting pan. Set the roast, fat-side up, on top of the bay leaves.
  4. In a small bowl, mix cider vinegar and thyme, then pour the mixture over the roast.
  5. Bake in the preheated oven until the internal temperature reaches 145 degrees F (63 degrees C), about 3 hours. Baste the roast frequently with drippings while cooking.
