  • 4 Pounds whole chicken
  • 2 Whole onions, divided
  • 3 Whole carrots, sliced
  • 2 Stalks celery, sliced
  • 1 Cup fresh dill weed, divided
  • 1 Pinch salt, to taste
  • 2 Tablespoons vegetable oil
  • 2 Tablespoons chicken cracklings (grebenes), minced
  • 2 Large eggs, whisked
  • 0.5 Cups matzo meal
  • 1 Teaspoon salt
  • 0.25 Cups vegetable broth

Steps

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the chicken under cold water and pat dry with paper towels.
  3. Stuff the chicken cavity with one onion, half of the dill, and a pinch of salt.
  4. Place the chicken in a roasting pan and surround it with the remaining onion, carrots, and celery.
  5. Drizzle the vegetable oil over the chicken and vegetables.
  6. Sprinkle the minced chicken cracklings over the chicken.
  7. In a small bowl, mix the whisked eggs, matzo meal, remaining dill, and salt.
  8. Pour the vegetable broth over the matzo mixture and stir until combined.
  9. Spread the matzo mixture over the chicken, pressing it gently to adhere.
  10. Roast the chicken in the preheated oven for 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C).
