- 0.5 Cups basil, minced

- 1 Teaspoon (tsp) salt
- 1 Teaspoon (tsp) black pepper, ground
- 1 16 Ounces (oz) package lasagna noodles
- 2 Pounds (lb) firm tofu, mashed
- 2 Tablespoons garlic, minced
- 0.25 Cups basil, minced
- 0.25 Cups parsley, minced
- 0.5 Teaspoon (tsp) salt
- 1 Pinch black pepper, ground
- 3 10 Ounces (oz) packages chopped spinach, drained
Steps
- Prepare the Sauce: In a large saucepan over medium heat, heat the olive oil. Add the minced onions and sauté until soft, about 5 minutes. Add the minced garlic and cook for an additional 5 minutes.
- Add the stewed tomatoes, tomato paste, basil, and parsley to the saucepan. Stir well, reduce the heat to low, and let the sauce simmer covered for 1 hour. Season with salt and pepper.
- Cook the Noodles: While the sauce is simmering, bring a large pot of salted water to a boil. Cook the lasagna noodles for 9 minutes, then drain and rinse well.
- Preheat the oven to 400 degrees F (200 degrees C).

Repeat the layers twice more, finishing with a layer of noodles topped with the remaining sauce.
