- 1 Tablespoon (tbsp) fresh lemon juice
- 1 Teaspoon (tsp) olive oil
- 1 Clove garlic, minced
- 2 Cups fresh spinach, torn

- 0.25 Cups roasted red bell pepper, minced
- 0.5 Teaspoons (tsp) onion powder
- 0.5 Teaspoons (tsp) garlic powder
- 0.5 Teaspoons (tsp) California garlic salt
- 2 Pats butter, unsalted
- 1 Pinch lemon wedges, to taste
Steps
- Preheat an outdoor grill to high heat and lightly oil the grate.
- Cut a slit in the swordfish steak to create a pocket, leaving one side open.
- In a small bowl, mix 1 tablespoon olive oil and lemon juice. Brush this mixture over both sides of the fish and set aside.
- Heat 1 teaspoon olive oil in a small skillet over medium heat. Add minced garlic and cook until fragrant. Add spinach and cook until wilted. Remove from heat.

- Stuff the spinach mixture into the pocket of the swordfish.
- Place the stuffed swordfish on the preheated grill. Cook for 8 minutes on one side, then turn over and continue cooking until the fish is cooked through and an instant-read thermometer reads 145°F (63°C).
