  • 1 Tablespoon (tbsp) olive oil
  • 1 Tablespoon (tbsp) fresh lemon juice
  • 1 Teaspoon (tsp) olive oil
  • 1 Clove garlic, minced
  • 2 Cups fresh spinach, torn
  • 0.25 Cups feta cheese, crumbled
  • 0.25 Cups kalamata olives, minced
  • 0.25 Cups roasted red bell pepper, minced
  • 0.5 Teaspoons (tsp) onion powder
  • 0.5 Teaspoons (tsp) garlic powder
  • 0.5 Teaspoons (tsp) California garlic salt
  • 2 Pats butter, unsalted
  • 1 Pinch lemon wedges, to taste

Steps

  1. Preheat an outdoor grill to high heat and lightly oil the grate.
  2. Cut a slit in the swordfish steak to create a pocket, leaving one side open.
  3. In a small bowl, mix 1 tablespoon olive oil and lemon juice. Brush this mixture over both sides of the fish and set aside.
  4. Heat 1 teaspoon olive oil in a small skillet over medium heat. Add minced garlic and cook until fragrant. Add spinach and cook until wilted. Remove from heat.
  5. In a bowl, combine the wilted spinach, feta cheese, minced olives, and minced roasted red bell pepper. Season with onion powder, garlic powder, and California garlic salt.
  6. Stuff the spinach mixture into the pocket of the swordfish.
  7. Place the stuffed swordfish on the preheated grill. Cook for 8 minutes on one side, then turn over and continue cooking until the fish is cooked through and an instant-read thermometer reads 145°F (63°C).
  8. In the last 2-3 minutes of cooking, add two pats of butter on top of the fish and broil for a golden finish.
