- 2 Whole mangos, peeled
- 4 Pounds (lb) pork shoulder roast
- 2 Tablespoons (tbsp) black pepper, ground
- 1 Teaspoon (tsp) kosher salt
- 2 Teaspoons (tsp) chipotle chile powder
- 0.25 Cups balsamic vinegar
- 2 Cups water
- 2 Teaspoons (tsp) honey
- 1.5 Fluid Ounces (fl oz) bourbon whiskey
- 24 Ounces (oz) barbecue sauce
Steps
- Prepare the Pork: Place the pits of the peeled mangos into a slow cooker. Roughly chop the mango flesh and set aside. Place the pork shoulder into the slow cooker and season it with ground black pepper, kosher salt, and 1 teaspoon of chipotle chile powder. Pour in the balsamic vinegar and water.
- Slow Cook the Pork: Cover the slow cooker and cook on Low for 5 to 8 hours, or until the pork is very tender. Once cooked, drain the pork, discarding the cooking liquid and mango pits. Shred the pork using two forks.
- Make the Mango BBQ Sauce: While the pork is cooking, purée the chopped mango in a blender until smooth. Transfer the purée to a saucepan and add honey, the remaining chipotle chile powder, and bourbon whiskey. Bring the mixture to a simmer over medium heat. Reduce the heat to medium-low and simmer, stirring frequently, until the mango has reduced and darkened slightly, about 10 minutes. Stir in the barbecue sauce and remove from heat.
- Combine and Finish: Return the shredded pork to the slow cooker and stir in the mango barbecue sauce. Cover and cook on High for 1 to 2 hours, or until the pork has absorbed the barbecue sauce.
