Ingredients
- 2 Tablespoons (tbsp) white wine
- 2 Teaspoons (tsp) olive oil
- 6 Skinless, boneless chicken breast halves, seasoned
- 3 Cloves garlic, minced
- 0.5 Cups onion, minced
- 3 Cups tomatoes, minced
- 0.5 Cups white wine
- 2 Teaspoons (tsp) fresh thyme, minced
- 1 Tablespoon (tbsp) fresh basil, minced
- 0.5 Cups kalamata olives, halved
- 0.25 Cups fresh parsley, minced
- 1 Pinch salt, to taste
- 1 Pinch pepper, to taste
Steps
- Heat 2 tablespoons of white wine and 2 teaspoons of olive oil in a large skillet over medium heat. Add the chicken breasts and cook until golden brown, about 4 to 6 minutes on each side. Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic to the pan drippings and sauté for 30 seconds until fragrant. Add the minced onion and cook, stirring occasionally, until the onions are tender, about 3 minutes.
- Stir in the minced tomatoes and bring the mixture to a boil. Reduce the heat to low and add 0.5 cups of white wine. Let the sauce simmer for 10 minutes to allow the flavors to meld.
- Add the minced fresh thyme and basil to the sauce and continue to simmer for an additional 5 minutes.
- Return the chicken breasts to the skillet, cover, and cook over low heat until the chicken is cooked through and no longer pink inside, about 10 minutes.
- Add the halved kalamata olives and minced fresh parsley to the skillet. Cook for 1 more minute to heat through. Season with salt and pepper to taste.
