  • 2 Cups canned crushed tomatoes
  • 0.33 Cup dark raisins
  • 1 Pound eggplant, sliced

  • 1 Pinch pepper, to taste
  • 24 Ounces package refrigerated mashed potatoes, warmed
  • 1 Large egg, whisked

Steps

  1. Preheat your oven to 400°F (200°C).
  2. Heat 2 tablespoons of olive oil in a 12-inch ovenproof skillet over medium-high heat. Sauté the onions until tender, about 5 minutes.
  3. Add the minced garlic, ground cinnamon, and ground cloves to the skillet. Cook for about 1 minute until fragrant.
  4. Add the ground meat to the skillet, stirring to break it up, and cook for about 5 minutes until browned.
  5. Stir in the crushed tomatoes and raisins, and let the mixture simmer for 10 minutes.
  6. Arrange the eggplant slices on a lipped cookie sheet. Brush both sides with the remaining olive oil and season with salt and pepper.
  7. Broil the eggplant on the upper oven rack, turning once with kitchen tongs, until golden brown, about 5 minutes per side.
