- 24 Ounces package refrigerated mashed potatoes, warmed
- 1 Large egg, whisked
Steps
- Preheat your oven to 400°F (200°C).
- Heat 2 tablespoons of olive oil in a 12-inch ovenproof skillet over medium-high heat. Sauté the onions until tender, about 5 minutes.
- Add the minced garlic, ground cinnamon, and ground cloves to the skillet. Cook for about 1 minute until fragrant.
- Add the ground meat to the skillet, stirring to break it up, and cook for about 5 minutes until browned.
- Stir in the crushed tomatoes and raisins, and let the mixture simmer for 10 minutes.
- Arrange the eggplant slices on a lipped cookie sheet. Brush both sides with the remaining olive oil and season with salt and pepper.
- Broil the eggplant on the upper oven rack, turning once with kitchen tongs, until golden brown, about 5 minutes per side.
