Ingredients

  • 28 Ounces chicken broth
  • 14.5 Ounces diced tomatoes, drained
  • 1 Medium onion, minced
  • 0.5 Medium green bell pepper, minced
  • 8 Ounces tomato sauce
  • 0.5 Cups orange juice
  • 0.5 Cups dry white wine
  • 2.5 Ounces canned mushrooms
  • 0.25 Cups black olives, sliced
  • 2 Whole bay leaves
  • 2 Whole garlic cloves, minced
  • 1 Teaspoon dried basil
  • 0.25 Teaspoon fennel seed, ground
  • 0.125 Teaspoon black pepper, ground
  • 1 Pound medium shrimp, peeled
  • 1 Pound cod fillets, divided

Steps

  1. In a large pot, combine chicken broth, diced tomatoes, onion, and green bell pepper. Bring to a simmer over medium heat.
  2. Stir in tomato sauce, orange juice, and white wine. Add mushrooms, olives, bay leaves, garlic, basil, fennel seed, and black pepper. Simmer for 15 minutes.
  3. Add shrimp and cod to the pot. Cover and cook for 10-15 minutes, or until the shrimp are pink and the cod is flaky.
  4. Remove bay leaves before serving. Adjust seasoning with salt and pepper to taste.
  5. Serve hot, optionally with rice, crusty bread, or a fresh salad.
