- 1 Tablespoon (tbsp) olive oil
- 1 Tablespoon (tbsp) fresh lemon juice
- 1 Teaspoon (tsp) olive oil
- 1 Clove garlic, minced
- 2 Cups fresh spinach, torn
- 0.25 Cups feta cheese, crumbled
- 0.25 Teaspoon (tsp) onion powder
- 0.25 Teaspoon (tsp) garlic powder
- 0.25 Teaspoon (tsp) California garlic salt
- 2 Tablespoons (tbsp) black olives, minced
- 2 Tablespoons (tbsp) orange bell pepper, minced
- 2 Pats butter
- 2 Lemon wedges
Steps
- Preheat an outdoor grill for high heat and lightly oil the grate. Alternatively, preheat your oven to 350°F (175°C) for baking.
- Cut a slit in the swordfish steak to create a pocket, leaving one side open.
- In a small bowl, mix 1 tablespoon of olive oil with the lemon juice. Brush this mixture over both sides of the fish. Season with onion powder, garlic powder, and California garlic salt. Set aside.
- Heat 1 teaspoon of olive oil in a small skillet over medium heat. Add minced garlic and cook until fragrant. Add spinach and cook until wilted. Remove from heat.
- In a bowl, combine the wilted spinach, crumbled feta, minced black olives, and minced orange bell pepper. Stuff this mixture into the pocket of the swordfish.
- If grilling, place the stuffed swordfish on the preheated grill and cook for 8 minutes on one side. Turn over and continue cooking until the fish is cooked through and an instant-read thermometer reads 145°F (63°C).
- If baking, place the stuffed swordfish in a baking dish. Bake for 20 minutes, then add two pats of butter on top and broil for an additional 2-3 minutes until the top is golden and the fish is cooked through.
- Serve the swordfish with lemon wedges on the side for an extra burst of flavor. Enjoy your Mediterranean feast!
