Ingredients
- 8 Ounces (oz) swordfish steak
- 1 Tablespoon (tbsp) olive oil
- 1 Tablespoon (tbsp) fresh lemon juice
- 1 Teaspoon (tsp) olive oil
- 1 Clove garlic, minced
- 2 Cups fresh spinach, torn
- 0.25 Cups crumbled feta cheese
- 0.25 Teaspoons (tsp) onion powder
- 0.25 Teaspoons (tsp) garlic powder
- 0.25 Teaspoons (tsp) California garlic salt
- 2 Tablespoons (tbsp) black olives, minced
- 2 Tablespoons (tbsp) orange bell pepper, minced
- 2 Pats butter
- 1 Pinch lemon wedges, to taste
Steps
- Preheat an outdoor grill to high heat and lightly oil the grate.
- Cut a slit in the swordfish steak to create a pocket, leaving one side open. In a small bowl, mix 1 tablespoon of olive oil with lemon juice, onion powder, garlic powder, and California garlic salt. Brush this mixture over both sides of the fish and set aside.
- In a small skillet, heat 1 teaspoon of olive oil over medium heat. Add minced garlic and cook until fragrant. Add spinach and cook until wilted. Remove from heat and mix in chopped black olives and diced orange bell pepper.
- Stuff the spinach mixture into the pocket of the swordfish steak. Top with crumbled feta cheese.
- Place the stuffed swordfish on the preheated grill. Cook for 8 minutes on one side, then turn over and continue cooking until the fish is cooked through and an instant-read thermometer reads 145°F (63°C).
