- 1 Medium onion, minced

- 15 Ounces can garbanzo beans, drained
- 2 Whole red bell peppers, sliced
- 1 Large carrot, sliced
- 3 Whole tomatoes, minced
- 4 Whole olives, minced
- 0.25 Cups fresh parsley, minced
- 0.25 Cups ground cumin
- 3 Tablespoons paprika
- 2 Tablespoons chicken bouillon granules
- 1 Teaspoon cayenne pepper
- 1 Pinch salt, to taste
- 5 Pounds tilapia fillets
Steps
- Heat the vegetable oil in a skillet over medium heat. Add the minced onion and garlic, cooking until the onion is softened and translucent, about 5 minutes.
- Stir in the garbanzo beans, sliced red bell peppers, sliced carrots, minced tomatoes, and minced olives. Cook until the peppers are slightly tender, about 5 more minutes.
- Sprinkle the minced parsley, ground cumin, paprika, chicken bouillon granules, and cayenne pepper over the vegetables. Season with salt to taste and stir to incorporate.
