  • 15 Ounces can garbanzo beans, drained
  • 2 Whole red bell peppers, sliced

  • 4 Whole olives, minced
  • 0.25 Cups fresh parsley, minced
  • 0.25 Cups ground cumin
  • 3 Tablespoons paprika
  • 2 Tablespoons chicken bouillon granules
  • 1 Teaspoon cayenne pepper
  • 1 Pinch salt, to taste
  • 5 Pounds tilapia fillets

Steps

  1. Heat the vegetable oil in a skillet over medium heat. Add the minced onion and garlic, cooking until the onion is softened and translucent, about 5 minutes.
  2. Stir in the garbanzo beans, sliced red bell peppers, sliced carrots, minced tomatoes, and minced olives. Cook until the peppers are slightly tender, about 5 more minutes.
  3. Sprinkle the minced parsley, ground cumin, paprika, chicken bouillon granules, and cayenne pepper over the vegetables. Season with salt to taste and stir to incorporate.
  4. Place the tilapia fillets on top of the vegetable mixture. Add enough water to cover the vegetables.
