Ingredients

  • 12 Cups water
  • 2 Large potatoes, peeled
  • 1 14.5 Ounces can whole peeled tomatoes, mashed
  • 0.25 Cups pearl barley
  • 0.25 Cups uncooked white rice
  • 2 Tablespoons margarine
  • 0.25 Teaspoons salt
  • 0.25 Teaspoons black pepper, ground
  • 1 Large carrot, minced
  • 1 Medium onion, minced
  • 1 Large stalk celery, minced
  • 0.5 Cups green beans, sliced
  • 1 Large potato, diced
  • 0.5 Cups frozen peas, drained
  • 0.5 Cups broccoli florets
  • 0.25 Cups barley flakes

Steps

  1. In a large stock pot, add 12 cups of water and 2 large peeled potatoes. Bring to a boil, then add the mashed tomatoes. Cook for 10 minutes.
  2. Add the pearl barley and white rice to the pot and continue cooking until the potatoes are tender.
  3. Remove the potatoes from the pot and mash them together with the margarine. Set aside.
  4. Add salt, ground black pepper, minced carrots, and sliced green beans to the pot. Cook for 10 minutes or until the carrots are tender.
  5. Add the minced onion, diced potato, minced celery, peas, and broccoli florets to the pot. Cook for an additional 5 minutes.
  6. Stir in the mashed potatoes and add the barley flakes. Cook for another 5 minutes.
  7. Serve hot and enjoy your hearty vegetable barley soup!
