Ingredients
- 1 Pound (lb) lean ground beef
- 1 Medium onion, minced
- 4.5 Ounces (oz) mushrooms, drained
- 28 Ounces (oz) spaghetti sauce
- 16 Ounces (oz) cottage cheese, packaged
- 1 Pint (pt) part-skim ricotta cheese, packaged
- 2 Large eggs, whisked
- 0.25 Cups Parmesan cheese, grated
- 16 Ounces (oz) lasagna noodles, packaged
- 8 Ounces (oz) mozzarella cheese, shredded and divided
Steps
- Preheat the oven to 350 degrees F (175 degrees C).
- Make Sauce: Heat a large skillet over medium-high heat. Cook and stir the ground beef until browned and crumbly, about 5 to 7 minutes. Add the minced onion and drained mushrooms; sauté until the onions are transparent. Stir in the spaghetti sauce and cook until heated through. Set aside.
- Make Filling: In a medium bowl, combine the packaged cottage cheese, packaged ricotta, whisked eggs, and grated Parmesan cheese. Set aside.
- Assemble Lasagna: Spread a thin layer of meat sauce in the bottom of a 13x9-inch baking dish. Layer with uncooked lasagna noodles, cheese filling, mozzarella, and more meat sauce. Continue layering until all components are used, reserving 1/2 cup of mozzarella. Cover the dish with aluminum foil.
- Bake: Bake in the preheated oven for 45 minutes. Remove the foil and top with the reserved 1/2 cup of mozzarella. Continue baking until the cheese is melted, about 15 more minutes.
- Let the lasagna stand for 10 to 15 minutes before serving.
