Serving Size: 4

Cooking Time: 30 minutes

Ingredients

  • 1 Pound (lb) linguini pasta
  • 0.25 Cup butter, melted
  • 5 Cloves garlic, minced
  • 1 Pound (lb) medium shrimp, peeled
  • 1 Cup bread crumbs
  • 0.5 Cup white wine
  • 1 Whole lemon, juiced
  • 0.25 Cup light olive oil

Steps

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. Bring a large pot of salted water to a boil. Add the linguini pasta and cook until al dente. Drain the pasta and set aside.
  3. In a large skillet, melt the butter over medium heat. Add most of the minced garlic, reserving some for later use. Coat the garlic completely with butter, ensuring it does not brown.
  4. Add the shrimp to the skillet and toss to coat with the butter and garlic mixture. Immediately remove the pan from heat; the shrimp will not be fully cooked yet.
  5. Sprinkle the shrimp with breadcrumbs, enough to coat them, and transfer the entire mixture to a medium casserole dish.
  6. Pour the white wine and lemon juice over the shrimp. Cover the dish and bake in the preheated oven for 10 minutes.
  7. Remove the cover and bake for an additional 5 minutes.
  8. In a small saucepan, heat the olive oil with the remaining garlic. Toss the cooked pasta with the olive oil and garlic mixture.
  9. Serve the baked shrimp over the pasta, with additional lemon slices on the side for garnish.
