  • 2 Tablespoons (tbsp) white vinegar
  • 0.5 Teaspoon (tsp) chili powder
  • 1 Tablespoon (tbsp) brown sugar
  • 1.5 Teaspoons (tsp) cumin, ground
  • 1 Pinch ground black pepper, to taste
  • 11 Ounces (oz) can Mexican-style corn, drained

Steps

  1. In a large bowl, combine the ground beef, 1 teaspoon of oregano, 1 tablespoon of minced parsley, and a pinch of salt. Mix until well combined.
  2. In a medium pot, bring the rice and water to a boil. Cover, reduce heat to low, and simmer for 20 minutes until the rice is tender.
  3. While the rice cooks, heat olive oil in a large skillet over medium heat. Add 1 minced onion and 1 minced garlic clove. Sauté until the onion is soft and translucent.
  4. Add the sautéed onion and garlic to the beef mixture. Form the mixture into 24 small meatballs.

  8. Return the meatballs to the skillet, ensuring they are coated in the sauce. Cook for an additional 10 minutes, or until the meatballs are cooked through.
  9. Once the rice is cooked, stir in the drained Mexican-style corn.
