Ingredients

  • 0.25 Cups salt
  • 0.25 Cups white sugar
  • 2 Tablespoons (tbsp) brown sugar, packed
  • 2 Tablespoons (tbsp) black pepper, ground
  • 2 Tablespoons (tbsp) white pepper, ground
  • 2 Tablespoons (tbsp) onion powder
  • 1 Tablespoon (tbsp) garlic powder
  • 1 Tablespoon (tbsp) chili powder
  • 1 Tablespoon (tbsp) paprika, ground
  • 1 Tablespoon (tbsp) cumin, ground
  • 10 Pounds (lb) baby back pork ribs
  • 1 Cup apple juice
  • 0.25 Cups brown sugar, packed
  • 0.25 Cups barbeque sauce

Steps

  1. Prepare the Rub: In a small bowl, combine salt, white sugar, brown sugar, black pepper, white pepper, onion powder, garlic powder, chili powder, paprika, and cumin. Mix well to create a uniform rub.
  2. Season the Ribs: Generously rub the spice mixture all over the ribs. Wrap the ribs in plastic wrap and refrigerate for at least 30 minutes to allow the flavors to penetrate.
  3. Make the Sauce: In a separate bowl, mix together apple juice, brown sugar, and barbeque sauce until well combined. Set aside for basting.
  4. Prepare the Smoker: Preheat your smoker to 270 degrees F (130 degrees C). Use apple, grape, pear, or cherry wood chips for a fruity smoke flavor.
  5. Smoke the Ribs: Unwrap the ribs and place them in a single layer on the smoker racks. Smoke the ribs for 1 hour.
  6. Baste and Continue Cooking: After the first hour, brush the ribs with the prepared sauce. Continue smoking, basting every 30 to 40 minutes, for an additional 3 to 4 hours, or until the ribs are tender and the meat begins to pull away from the bones.
  7. Rest the Ribs: Once cooked, brush the ribs with sauce one last time, remove them from the smoker, and wrap them tightly in aluminum foil. Allow the ribs to rest for 10 to 15 minutes to let the juices reabsorb into the meat.
  8. Serve and Enjoy: Unwrap the ribs, slice, and serve with your favorite sides. Enjoy the sweet and smoky flavors of these perfectly smoked ribs!
