Ingredients

  • 1.33 Cups all-purpose flour
  • 0.5 Teaspoon salt
  • 0.5 Cups cold butter, or 0.5 Cups shortening
  • 3 Tablespoons cold water
  • 2 Cups pie pumpkin, mashed
  • 12 Fluid ounces evaporated milk
  • 2 Large eggs, whisked
  • 0.75 Cups brown sugar, packed
  • 0.5 Teaspoon cinnamon, ground
  • 0.5 Teaspoon ginger, ground
  • 0.5 Teaspoon nutmeg, ground
  • 0.5 Teaspoon salt

Steps

  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. For the pastry crust, mix flour and salt in a bowl. Cut in butter with a pastry blender until the mixture resembles coarse crumbs.
  3. Gradually mix in 3 tablespoons of cold water, adding more if needed, until the dough holds together.
  4. Shape the dough into a ball with lightly floured hands. Roll it out on a lightly floured surface to a thickness of 1/8 inch.
  5. Place a 9-inch pie pan upside-down on the dough; cut a circle 1 ½ inches larger than the pan. Discard scraps.
  6. Roll the dough around the rolling pin and transfer it over the pie pan. Unroll and ease the dough into the pan.
  7. Flute the edges of the dough with your fingers.
  8. For the filling, beat together pumpkin, evaporated milk, brown sugar, eggs, cinnamon, ginger, nutmeg, and salt in a large bowl until well combined. Pour into the prepared crust.
  9. Bake in the preheated oven for 40 to 60 minutes, or until a knife inserted 1 inch from the edge comes out clean. Cover edges with foil if they brown too quickly.
  10. Remove from the oven and cool to room temperature before serving.
