  • 4 Tablespoons (tbsp) olive oil, divided
  • 2 Whole garlic cloves, minced
  • 4 Whole skinless, boneless chicken breasts
  • 4 Tablespoons (tbsp) red wine vinegar, divided
  • 1 Tablespoon (tbsp) Cajun-style seasoning
  • 1 Cup green onions, minced
  • 8 Ounces (oz) package fresh mushrooms, sliced
  • 4 Slices Swiss cheese

Steps

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. In a 9x13-inch baking dish, combine 3 tablespoons of olive oil with the minced garlic. Add the chicken breasts and turn them to coat evenly.
  3. Drizzle the chicken with 3 tablespoons of red wine vinegar and season generously with Cajun-style seasoning.
  4. Bake the chicken in the preheated oven for 30 minutes.
  5. Remove the chicken from the oven and top with minced green onions and sliced mushrooms. Drizzle the remaining 1 tablespoon of olive oil and 1 tablespoon of red wine vinegar over the top.
  6. Return the dish to the oven and bake for an additional 15 to 20 minutes, or until the chicken is no longer pink in the center and the juices run clear. An instant-read thermometer should read at least 165 degrees F (74 degrees C) when inserted into the center of the chicken.
