- 1.5 Pounds (lb) fresh green beans, drained
- 3 Ounces (oz) pancetta, minced
- 1 Whole shallot, sliced
- 1 Pinch salt, to taste
- 1 Pinch black pepper, to taste

- Bring a large pot of lightly salted water to a boil. Add the green beans and boil for 3 to 4 minutes until just tender. Drain the beans and immediately plunge them into ice water. Allow them to sit in the ice water until cold, then drain well and set aside.
